Banana and Date Loaf

Use this recipe to turn those ugly brown bananas into a deliciously moist banana and date loaf with just five steps to follow.


  • 115g unsalted butter

  • 150g light brown demerara sugar

  • 2 large eggs

  • 190g plain flour

  • 1tsp baking powder

  • 3 large ripe bananas, mashed

  • 170g dates, chopped


  • Using the all in one method, in a mixer, add the butter, sugar, flour, baking powder and eggs

  • Mix on medium speed until the ingredients are incorporated, it will look like wet sand at this point

  • Add the mashed banana and chopped dates to the mix and mix again on medium until well incorporated

  • Pour the mix into a greased and lined 2lb loaf tin

  • Bake in the oven at 160°C for 55 mins

  • Use a skewer to check your cake comes out clean. If the skewer has a few small crumbs when you remove it, this is fine. If it has raw batter when removed, put the loaf back in the oven for about 5 minutes and check again.
