Buffalo Chicken Wings

Chicken wings are no doubt one of the ultimate bbq food choices. Whether you have a few as a starter or go hard on an all you can eat wing challenge, you can't go wrong.


Making wings at home could not be easier, so resist the temptation to pick up a pack of ready prepared, and follow this recipe to satisfy your wing cravings.


Ingredients:

  • Full chicken wings

  • 2tsp dark brown sugar

  • 1tsp chilli powder

  • 1tsp paprika

  • 1tsp ground cumin

  • 1tsp cayenne pepper

  • 1tsp onion powder

  • 1tbsp olive oil

  • Salt and Pepper to taste

  • Buffalo sauce - we didn't make our own because we can't get enough of Sauce Shop

Method:

  • To prepare the chicken, with kitchen scissors cut off the excess skin found in the crease of the wing

  • Find the joint between the two bones and using a sharp knife separate the drumette and the flat, you should be able to feel the joint

  • In a bowl, mix together the dried spices and leave to one side

  • In a separate bowl, add your chicken wings and coat in the olive oil

  • Add the dried spice mix to the wings and coat thoroughly, using your hands to massage it all in

  • Leave to marinate for a minimum of one hour, you can leave these for up to 24 hours

  • To cook, we used a BBQ but you can cook in an oven at 180°C until the internal temperature is 74°C (165°F)

  • If you are bbq'ing, you will need to set your bbq up for direct and indirect heat

  • Place the wings in foil trays and cover with foil

  • Once the bbq is ready, place the foil trays on the indirect heat side of the bbq

  • After about 20 minutes, check the internal temperature (same as above)

  • When the wings are ready, remove from the tray and grill on the direct heat to your liking. We did ours for about 5-7 minutes

  • When removing your wings from the heat, place in a bowl and brush on your buffalo sauce

Serve with a blue cheese sauce to get that classic flavour combination
