Mr Whippy Ice Cream Cakes (Kids Recipe)

I scream, you scream, we all scream for ice cream...cakes!

Who gets super excited when they hear the ice cream van coming down the road? Who gets super sad when they don't hear it too?! I know when I was younger, if the ice cream van didn't come to where I lived on a hot day, I'd be upset!

Recreate your favourite Mr Whippy Ice Cream into a cake version and fool everybody with this easy to follow recipe. You will require some adult supervision.

Ingredients (makes 12):

For the cake:

  • 150g baking butter, room temperature

  • 150g caster sugar

  • 150g self-raising flour

  • 3 eggs

  • 1tsp vanilla essence

  • Askeys cup cornets

For the buttercream (Fools Ice Cream):

  • 250g unsalted butter

  • 500g icing sugar

  • 1tsp vanilla essence


  • Scales

  • Big mixing bowl

  • Muffin tray

  • Whisk - there are lots of whisks you can use. An electric hand whisk, a big fancy stand mixer or a hand whisk (for those that are feeling mighty strong)

  • Big spoon or spatula - wooden or silicone

  • Piping bag - use this step-by-step guide to make your own

  • Star piping nozzle - if you don't have one, it doesn't matter

  • Chopping board & knife

Types of whisks:


  • Ask an adult to turn your oven on and preheat it to 160°C

  • Take 12 cup cornets and stand them upright into a muffin tray

  • In a big bowl, add the butter, sugar, flour, eggs & vanilla essence and using your whisk, mix together until the ingredients are smooth

  • Using a teaspoon, spoon the cake mix into each cone, making sure it's pushed to the bottom and fill to they are 3/4 full (use the ring around the outside of the cone as your guide)

  • Ask an adult to place the cakes in the oven and set your timer for about 25 minutes to bake

Top tip: whilst your cakes are baking, this is the perfect time to clean up the mess you have made so far
  • When the timer beeps, gently push a skewer or knife into the cake, if it comes out clean, it's cooked! If not, put them back in the oven for 5 minutes, and test again. When they are cooked, remove from the oven and leave to cool on a wire rack

  • To make the buttercream (fools ice cream), in a large bowl, add the unsalted butter, icing sugar and vanilla essence

  • Using your big spoon or spatula, mix the icing sugar and butter together until they come together and look a bit like sand. By doing this, you won't get lots of icing sugar powder splash out of the bowl and go all over you

  • Then, if you are using an electric whisk, continue to mix on medium speed. Or, if you're feeling super strong, carry on using your big spoon until you get a satin-smooth white buttercream

  • Spoon the buttercream into a piping bag fitted with a nozzle (I used a Wilton 1M Nozzle to get the Mr Whippy swirl, but if you don't have one, just snip the end of the bag)

  • Starting from the inside -pipe outwards, slightly overlapping as you go around the cake, then return inwards and finish with a point at the top

  • Chop a Cadbury Flake in half and finish off your ice cream cake by pushing it into the side - just how the ice cream person does!

Now, it's time to tuck in with your friends and family and see who is fooled in thinking it was from the ice cream van!
