Onion Bhajis
Make delicious onion bhajis at home just like you'd find in your favourite Indian restaurant.
Ingredients:
1 onion, sliced
1/2 green pepper, chopped
1/2 potato, peeled and matchstick slices
1 tsp lazy chillies
1 tsp lazy garlic
1 tsp ground coriander
1 tsp ground cumin
1 tsp paprika
1 tsp turmeric
2 tsp mild curry powder
Pinch of salt
1 egg
150g gram flour
Bowl of water, to mould
Vegetable oil
Method:
In a large bowl, add the sliced onion, chopped pepper and matchstick slices of potato together and mix to incorporate
Add all the dried spices and lazy chillies and garlic and mix again
Crack one egg into the mixture and incorporate, your mix should now be getting sticky
Add the flour and mix well till you no longer can see the grains of flour
When ready to cook, heat either your deep fat fryer to 160°C, alternatively if you don't have a fryer, fill a saucepan with vegetable oil and heat to a medium-low temperature
Wet your hands with some of the water and shape the onion bhaji mixture into small balls. Try not to push the mixture to hard together so you don't get packed stodgy onion bhajis
Carefully drop the onion bhajis into the oil and fry for 8-10 minutes
Leave to drain in the fryer basket or on cloth for a few minutes to remove excess oil before serving
Dish up with your favourite curry, white fluffy basmati rice and naan breads for the perfect Indian fakeaway
