Singapore Noodles

Singapore Noodles are packed with flavour and full of goodness, they are also so easy to make. It really is a win, win food situation.

Ingredients (serves two):

  • 3 vermicelli noodle nests

  • 1/2 red pepper

  • 1/2 yellow pepper

  • 2 handfuls of pak choi

  • 4 spring onions

  • 1 tsp fresh ginger, grated

  • 12 tiger prawns

  • 1 tsp lazy chillies

  • 1 tsp lazy garlic

  • 2 tsp curry powder

  • 1 tbsp light soy sauce

  • 1 tbsp sesame oil


  • In a wok heat up the sesame oil and add your prawns along with the chilli and garlic

  • Whilst these are cooking, in a separate bowl, mix together the soy sauce and curry powder and leave to one side

  • Once the prawns have just turned pink, remove from the wok and leave in a bowl to one side

  • Boil your kettle and place the vermicelli nests into a bowl and top with boiling water - leave for 3-5 mins

  • Add the peppers and pak choi to the wok and stir fry for a couple of minutes until they begin to soften

  • Once slightly softened, add the spring onions and prawns back to the wok and stir in the mixed soy and curry powder

  • Once all combined, add the vermicelli noodles and mix it all together to create your Singapore Noodles
