Traditional Sausage & Tomato Pasta

Italians are notorious for having simple recipes with maximum flavours. This sausage and pasta dish is fuss-free, packed with flavour and full of things you're likely to already have in your fridge and cupboards.

Ingredients (serves 2):

  • 2 tbsp oil

  • 1 white onion, chopped

  • 2 sprigs of rosemary

  • 1 tsp lazy garlic

  • 4 sausages, skinned and chopped

  • 1 tin of chopped tomatoes

  • Splash of white wine - we used an Australian Sauvignon Blanc

  • Fresh pasta - any variety you like

  • Salt & Pepper - to taste

  • Grated parmesan cheese - to taste


  • In a large pan, heat 1 tbsp oil and add the onion at a low heat to soften but not brown, roughly five minutes

  • Add the rosemary, off the stalks, then the lazy garlic and stir to incorporate the flavours for a few minutes

  • Remove the onion mixture from the pan and set to one side

  • Add the sausages to the pan with the remaining oil and fry until they begin to brown and crisp around the edges

  • Add the onion mixture back into to the pan and add a generous splash of white wine

  • Let the wine heat until it starts bubbling, then add the tin of chopped tomatoes

  • Let this simmer for 10 minutes

  • Meanwhile, heat a pan of salted water to cook your pasta

  • Add the pasta to the sausage mix and mix all together

  • Serve and top with some freshly grated parmesan cheese
