Tzatziki

Tzatziki is a dip that I could eat endless bowls of with fresh warm flatbreads..anyone else?

With a quick whip up of a few ingredients, you can make this bowl of delight to serve with a kebab, bbq skewers, or a meze board.


Ingredients:

  • 1/2 Cucumber

  • 250g Greek yogurt

  • 2 tsp lazy garlic/2 garlic cloves finely chopped

  • 1 tbsp fresh dill

  • 1 tbsp fresh mint

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt & Pepper


Method:


  • Peel the skin from your cucumber cut lengthways in two and remove the middle

  • Finely grate the cucumber, put it in a sieve over a bowl and using the back of a teaspoon, press the excess water out of the cucumber

  • Add all the ingredients together in a clean bowl and mix together

  • And that's it... Tzatziki!


For best results, I leave to chill in the fridge for a couple of hours however it still tastes good served straight away.
